Inspiration Monday

If I’m ever in need of some inspiration and motivation, this is the video I watch:

Today was a new start for me because I ate like crap last week and took too many days off from the gym. Even trainers have bad days.

Today I didn’t want to work out when I got to the gym. I felt tired and sluggish (probably because of the way I ate over the weekend). Luckily, I trained my clients first thing in the morning so I got motivated by working them out. After I completed my workout, which was BOMB Diggity, I felt rejuvenated and ready to tackle my goals this  week/month. 

Listen, if you have a bad day or even a a bad week, no biggy!!! Just start fresh the next day, or even in that moment you realize that you just need a fresh start.   Of course, our goal is to remain as consistent as possible (that’s how we reach our goals), but things happen from time to time, and we’ll eat a little more than we should, not workout has hard as we should or often, but again, that doesn’t mean you’ve failed or you can’t continue reaching for your goals.  

 We slip up from time to time and there is no sense in beating yourself up over it. I sure don’t.

My Story as a Health Nut

It took me 2.5 hours to go grocery shopping last night, plus another hour to prep all the food. I didn’t expect the whole process to take that long, but I knew I needed to get some sustainable food…healthy food. I recently relocated to a new area and have been living off of “snacky” type health food as I have been adjusting to my new place. I wasn’t feeling satisfied throughout my day, but I wasn’t going to give in and eat overly processed food either. I decided it was crucial to spend time and money on foods that will satisfy my hunger. If you know me, I am hungry all day long. If I am not getting healthy proteins and fats, with my veggies, I go crazy!

I haven’t always been a craver of healthy food. In fact, I grew up thinking I could eat whatever I wanted and be fine. That was a great plan through high school. I was active and young; my body had no problem consuming processed garbage. It wasn’t until my mid 20s that I realized I needed to become aware of what I actually put into my body. I was working out consistently, but the weight kept increasing. Luckily I am fairly tall and can hold my weight well. Around 2010 my sister, Kjell, asked if I wanted to do a no sweets and low carb diet for about 3 months. At this point I was ready to make a change. Carrying the excess weight of 30 pounds was starting to weigh on me (pun intended). This was the start of my love for understanding food and how it can change us. Since that time, I have actively lived a low sugar/low carb lifestyle—and I love it.

At this point, I am on a year adventure eating the Paleo Diet. I have made some modifications and I do have cheat days. I do love a good homemade cookie or chocolate ice cream! I wouldn’t go as far to say that the Paleo Diet is for everyone. You have to remember I have been eating pretty strict for about 4 years. I am accustomed to the restrictions. If you are thinking about Paleo or another restrictive type diet, please do your research and prepare. I do not support yo-yo dieting or quick fixes. Eating healthy, in any form, takes discipline and preparation; otherwise we usually fail. I will definitely talk more about my paleo experience, but for now, just know that I am an advocate for plant-based diets that include lean protein and healthy fruits and fats. I have seen a difference in my life. Not just through my physical appearance, but with my energy, my confidence, and my overall quality of life.

I look forward to posting more- I have great recipes (paleo and non paleo) to share with you all. I know Kjell can give you some great workout ideas, but I’ll post about my workout experiences and fun things I like to try.

P.F. Chang’s Lettuce Wraps

Stop what you’re and go get the ingredients for this recipe. Seriously, this is so easy and quick, it’ll blow your mind. This meal is just bomb-diggity. I made it for a party last week and there wasn’t anything leftover. I made it again today for lunch and can’t wait to have it for dinner!! You can also cook up some brown or white rice to throw on your lettuce wraps to make it a really dense meal.

Thanks to my client, Lee, for sharing the recipe with me, which she got from this site. And now, I want to share it with all of you.
Here are some things I did different:
1)I didn’t have peanut butter so I used macadamia nut butter, and I’m sure you could use almond butter, too. I personally like the peanut butter a little bit better last week when I used it.
2)I used Bragg’s Liquid Aminos instead of regular soy sauce because it’s gluten free. 
3) I decided to also cut up some Napa Cabbage to throw in.
4) And for this one, to make it kid-friendly, I only used 1 teaspoon of the chili garlic sauce, but would HIGHLY recommend using two if not sharing with kids. I like a little extra spice, but it’s not too spicy with the 2 teaspoons for adults, but probably is for kids.
5) I use butter lettuce for wraps, but also like to use romaine, which doesn’t hold as well, but it’s more nutritionally dense. 
6) I used chopped up almonds at the last instead of peanuts; i’m not a fan of peanuts.
7) I used ground up ginger instead of the fresh ginger because I didn’t have it!

1lb ground chicken breast
1/2 onion, minced
salt & pepper 2 garlic cloves, minced
1″ knob ginger, peeled & minced
2-1/2 Tablespoons soy sauce
1 Tablespoon + 1 teaspoon rice vinegar
1 Tablespoon sesame oil
1 Tablespoon peanut butter
1/2 Tablespoon water
1/2 Tablespoon honey
2 teaspoons chili garlic sauce (or more if you like it hotter)
dash of pepper
3 green onions, chopped
1/2-8oz can sliced water chestnuts, drained & chopped
1/4 cup peanuts, chopped
10-12 large outer lettuce leaves, rinsed and patted dry

    Instructions:
    Heat a large, non-stick skillet on high. Add chicken, onion, salt and pepper then cook until chicken is nearly done, stirring often to break up the meat. Add garlic and ginger then continue cooking until chicken is no longer pink.

      Meanwhile, in a microwave safe bowl, combine soy sauce, vinegar, oil, peanut butter, water, honey, chili garlic sauce and pepper. Microwave for 20 seconds, then stir until smooth. Add into the skillet and stir to combine.
      Add green onions and water chestnuts into the skillet then cook for 1-2 minutes until the onions are soft and the water chestnuts are heated through.
    • photo 3Sprinkle with chopped peanuts (or almonds!), and serve with cold lettuce leaves.

Reasons why working out is totally worth it

Homemade LARA BARS!!

If you haven’t tried Lara Bars, you’re totally missing out! They are bars that are gluten free, vegan free, typically less than 5 ingredients, and are mostly made out of fruits and nuts.

They’re a great mid-morning or afternoon snack.

My favorite is the coconut cream because coconut is my fffaaavvvoooorrrittteee flavor of all time.

I came across a recipe for homemade coconut Lara bars and I just HAD to make it happen.

1/2 cup almonds
1/2 cup unsweetened shredded coconut
8 pitted dates
1 tsp coconut oil

I doubled my recipe.

Mix all in a food processor. Lay it out on plastic wrap and put in fridge for 10 minutes to harden up.
Then shape and cut  them into your bars! Enjoy!
